Traditional Farmfresh Turkey

This name has legal status as a ‘Protected Food Name’ within the EU as a Traditional Specialty Guaranteed (TSG). It means that the turkey has been produced using traditional methods as regards age, stocking density, diet, processing and hanging times.
Menus using such descriptions must ensure the turkey meets this legal definition.
Best Practice Guidelines
There is no obligation on caterers to show the origin of any poultry or game on their menus, but if they choose to do so, they are required by food and trading standards law to ensure that their descriptions do not mislead the customer.
When the terms ‘Scottish’ or ‘Product of Scotland’ are applied to poultry and game, this means that Scotland was the last place of ‘substantial change’, which may include processes such as making into a prepared product or cooking. Such poultry or game may have been born, reared and slaughtered elsewhere in the world.
How to Apply in Your Business
Asking your supplier for more details on the actual source of poultry or game, or buying direct from the farm, estate, processor, or hunter may enable you to make more accurate or detailed origin claims.
